Bread Machine Pita Bread

As most of you know I LOVE LOVE LOVE my bread machine, not for baking (I always bake my bread in the oven) but to take the work out of bread making. If you have one in a cupboard or closet somewhere for heaven's sake TAKE IT OUT and USE it!!! If you don't have one that's okay just dig that dough hook for your stand mixer out of the drawer and let it do the work for you.
I have been looking for and trying some new recipes for my machine and found this one for pita bread. So yummy so easy and a nice change for Hubby's lunch, nothing like the cardboard pitas from the grocery store!! I (of course) changed it a bit by using whole wheat flour.


1 and 1/8 cups water
2 cups all purpose flour
1 cup whole wheat flour
1 teaspoon salt
1 tablespoon vegetable oil
2 teaspoons sugar
3 teaspoons instant yeast

Put everything into the bread pan of your bread machine, select dough setting and start. Let dough going through first rise. (If you're using a stand mixer use warm water and mix with the dough hook until dough is formed, you may need to add a little extra flour. Once dough is formed let the hook knead the dough for about 10 minutes. Let rise for about 20 minutes.)



Turn dough out onto a floured counter. Knead dough a few times then divide into 8 equal pieces with a sharp knife. With a floured rolling pin, roll each piece out into a 6" circle (dough will be very thin). Lay circles on lightly floured surface and cover with a dry light-weight dish towel. Let it rest for 30 minutes or until slightly puffy.



In the meantime, heat your oven to 500 (yep! 500) and place a wire cooling rack into your oven (set it right on the oven rack...no pan please). Place a circle of dough gently on the hot cake rack (bake 2 at a time). Bake for five minutes until they are puffed and lightly brown. Remove gently with tongs and place in a brown paper bag, (don't know why, just do it) make sure you seal up the bag well and let the pita's cool in there.




They will look like this: Mmmmmmmmmmmm!



Now if it were only summer so I could stuff these full of fresh cucumbers, tomatoes, & spinach... well a girl can dream!! Instead I will have a little tuna salad. I found this recipe and lots of other bread machine recipes on TipNut.com check it out.
